3/4 C. yellow onion, diced
2 tbsp. extra virgin olive oil
1 3/4 C. chicken broth (hot)
6 oz. baby spinach, thinly sliced
1 tsp. lemon zest
1 bunch green onions, thin sliced
1 1/2 tbsp. fresh dill
4 tbsp. garlic, chopped
2 C. orzo
salt and pepper to taste

Directions:
Directions:
Saute onion and garlic in olive oil for 5-7 minutes. Add orzo and saute additonal 5 minutes. Add broth and cook additional 5 minutes to cook the orzo. Add balance of ingredients, mix well and heat additional 2 minutes. Season with salt and pepper.
