2 cups chopped celery
1 t diced green onions (or more!)
1 cup grated mild cheddar cheese (opt.)
1 cup slivered almonds
4 hard boiled eggs, chopped up (opt.)

Dressing:
2 T lemon juice
2 t salt
1 cup Mayo
