1 pkg. Tortilla soup mix
1 lb. chicken breast
2 tbsp. minced, fresh cilantro
2 jalapeņo peppers
8 oz. shredded fat free Monterey jack cheese
14 oz. can diced tomatoes
8 oz. sliced mushrooms

Directions:
Directions:
Cook chicken thoroughly. Shred and set aside. Combine tortilla soup mix with 7 cups water in a large saucepan. Bring to a boil. Add one 14 oz. can diced tomatoes. Reduce heat and simmer for 20 minutes. During the last 5 minutes of cooking, add remaining ingredients.. continue to simmer. Cheese can be added during last 5 minutes of cooking or upon serving.
