6 medium ripe tomatoes
1 t. salt
1 1/2 c. sugar
3 T. all-purpose flour
1 t. ground cinnamon
1 t. ground nutmeg
1 t. grated lemon zest (peel)
1 t. pure vanilla
1/2 stick butter
1 c. water
1 single pie crust

Directions:
Directions:
Boil 2 quarts of water. Put tomatoes in boiling water and let set five mins. Remove tomatoes. Peel and core them. Cut into slices or cubes. Put water in sauce pot, add tomatoes and ring to a boil. Simmer over low heat for about 5 mins. Mix sugar, flour, cinnamon, lemon zest, salt and nutmeg. Put into tomatoes and cook until slightly thickened. Stir occasionally. Add butter and vanilla. Put into a 2 1/2 quart casserole dish. Cover with the pie crust and seal the edges. Prick with a fork and sprinkle lightly with cinnamon, nutmeg and dot with butter. ake in 375F oven until brown, about 40 mins.
