8 slices wholemeal bread
2 tbsp butter
1 cup ricotta
2 tbsp honey
2 bananas, sliced

Directions:
Directions:
If liked, trim the crusts from the bread.
Spread one slice of each slice with butter.
Combine ricotta and honey in a bowl until a smooth consistency.
Add banana to cheese mixture.
Pile an equal amount of mixture in the centre of four slices. Cover with remaining slices and gently press edges to seal.
Cook in jaffle iron or an electric flat sandwich maker.

For savoury fillings try : egg, tomato, cheese, ham, cooked bacon, baked beans, canned fish, cooked mince or sausage.
Other sweet fillings could be ricotta with grated apple or diced pineapple or sliced stone fruit.
