Beat:
3 eggs
2 c. sugar
3/4 c. oil
3 squares baking chocolate, melted
2 tsp. vanilla
Add:
2 c. flour
1 tsp. soda
1/4 tsp. baking powder
2 tsp. cinnamon
1/4 tsp. salt
1/2 c. nuts, chopped
Fold in:
2 c. zucchini, peeled & grated

Mix sugar, eggs, vanilla, oil. Sift dry ingredients. Add to mix. Add zucchini. Bake 325, 1 hour or until done.
