1 cup pancake mix
1 tablespoon granulated sugar
1 large egg
3/4 cup milk
2 teaspoons vegetable oil
1 large ripe banana, mashed

1/2 cup pecans, chopped

Directions:
Directions:
In a bowl combine pancake mix and sugar. In another bowl beat egg, milk and oil. Add liquid ingredients to dry ingredients and mix. Fold in mashed banana and pecans. Pour batter by ¼ cupfuls onto a griddle coated with cooking spray. When bubbles form on top of pancakes, turn. Serve with maple syrup.
