1 1/4 c sugar 2 c carrots, grated
2 1/4 c flour 1 apple shredded
1 T cinnamon 8oz. crushed pinapple,drained
2 tsp baking soda 1/2 c pecans
1/2 tsp salt 3 eggs
1/2 c cocconut 1 c vegetable oil
1/2 c raisins 1 tsp vanilla

1. Sift dry ingredient into lg. bowl. Add fruit, carrots, nuts and mix well.
2. In a separate bowl whisk together eggs oil and vanilla. Pour over dry ingredients and blend well.
3. Fill muffin cups to brim.
4. Bake at 350 for 35 min. Cool in pans 10 min.
5. Best after 24 hours. These freeze well.
