6 cups water
4 Cups pecan halves
Approximately 1 inch of Wesson oil in deep pan
1 1/2 cups sugar
Dash of salt

Directions:
Directions:
Bring water to a boil and add the pecans. Allow pecans to boil for one minute. Drain in colander and rinse off with running hot water. Place pecans back into the pot. Add sugar and stir until sugar dissolves. Add pecans to hot oil in large pan (I use large cast iron pan). Fry until golden brown. Remove from oil with slotted spoon to colander. Spread on a sheet of wax paper and sprinkle with salt. Let stand until cooled. (Note: You may have to pull apart because they will want to stick together. Also, when I start taking the pecans out of the oil, I cut the burner off. This keeps them from burning because some of the sugar will settle to the bottom of the pan and will burn. )
