4 ounces lean turkey sausage
1/3 cup sliced green onions
1 cup fat-free egg substitute
4 whole wheat tortillas
1 cup reduced-fat shredded cheddar cheese
1/4 cup Salsa

1.) Heat a large nonstick skillet over medium-high heat. Add sausage and green onions, and cook 2 minutes or until sausage is browned. Pour egg substitute over sausage mixture. Cook until egg substitute mixture is set, stirring occasionally.

2.) Place tortillas between 2 paper towels, and microwave at high 1 minute or until warmed. Spoon about 1/2 cup egg mixture onto each tortilla; sprinkle evenly with cheese. Fold opposite sides of tortillas over filling. Serve immediately with salsa.
