3 very ripe bananas, mashed
1 c. sugar
1 egg
1/4 c. canola oil
1/2 c. applesauce
2 c. flour
2 tsp. baking soda
3 T. low-fat buttermilk
2 T. vanilla extract
vegetable oil/spray

Directions:
Directions:
Preheat oven to 300º. In large mixing bowl, mix bananas, sugar, egg, oil and applesauce. Add flour and baking soda, mix again. Add buttermilk and vanilla. Blend, do not over mix. Wipe/spray muffin tins or mini muffin tins with vegetable spray. Fill tins 2/3 full. Bake about 25-30 minutes for regular muffin tins and less for mini muffin tins.
