4 lb pot roast
1 tbsp olive oil
1 tsp salt
1/2 tsp pepper
6 medium onions
1 1/2 cup beef broth
3/4 cup beer
2 tbsp brown sugar
3 tbsp dijon
2 tbsp vinegar

Directions:
Directions:
Braise meat in skillet with oil. Place onions in crock pot. Place beef on onions. Mix remaining ingredients and pour over beef. Cook on low for 10 hours until tender. Thicken with cornstarch.
