3 cups of chopped apples (I use red delicious)
1 C. vegetable oil
2 C. sugar
2 eggs
2 1/2 C. plain All Purpose flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1 pkg butterscotch morsels

Directions:
Directions:
Mix oil, sugar and eggs. Mix dry ingredients together then add to the wet ingredients and mix by hand. Add 3 cups of chopped apples. Optional: 1 cup pecans may be added. Pour into 9 x 13 inch pan. Spread 1 package butterscotch morsels across top. Bake at 350º for 45 to 50 minutes.

Chop the apples and cover with water to keep apples moist. This also helps to moisten the cake because as you put the apples over into the mixture a little water gets added to the mixture.
