1 small package instant sugar-free butterscotch pudding mix
1 (8 oz) can crushed pineapple, with juice
3 cups (or more) diced and unpeeled Granny Smith apples
1 (8 oz) container fat-free Cool Whip, thawed
1 cup dry roasted peanuts (unsalted)
1 cup mini marshmallows

Directions:

In a large bowl, add dry pudding mix to Cool Whip, and stir until well blended. Add remaining ingredients and mix well. Place mixture in a serving dish and cover. Refrigerate overnight.
