1 cup oil
2 cups sugar
2 eggs, well beaten
2 tsp vanilla
3 cups flour
1/2 tsp salt
1 tsp baking soda
3 caps peeled and chopped apples
1 cup pecans, chopped

Directions:
Directions:
Combine oil, sugar, eggs, and 1 tsp vanilla. Measure and sift flour, salt, and soda. Then add to first mixture. Stir in remaining vanilla, apples and nuts. Mix well. Mixture will be very stiff. Pour into a 9 x 13-inch baking pan. Bake at 300 degrees for 1 hour.
