4 Salmon Filets
1 cup chopped Tomatoes
1 cup chopped Leeks
1 cup chopped Kalamata olives
1/2 cup sliced Zucchini
2 Tbsps Olive Oil
1 lemon
4 large squares of heavy duty foil

Directions:
Directions:
For each square of Foil :

Place one Salmon Fillet on Foil
Top with 1/4th of the Tomatoes, Leeks, Olives and Zucchini
Drizzle 1/4th of the Olive Oil onto each Salmon
Salt and Pepper each to taste
Quarter Lemon and squeeze one piece onto each Salmon packet, leaving lemon in each packet
Fold foil around each serving, closing tightly

Grill on Barbeque Grill medium high heat for approx 20 minutes - check to see if fish is opaque

or Bake in the Oven on Baking sheet, 350 for approx 30 minutes

To Serve, open each packet and remove Salmon and Vegetables to Plate
