Stuffed Shells Recipe

2 boxes large shells
1 large container ricotta cheese
1 egg
3 tablespoons fresh flat leaf parsley
1 package shredded mozzarella cheese
1 cup grated Parmesan cheese
16 oz homemade marinara sauce ( or favorite jarred variety)

Bring 2 large pots of water to boiling
Cook pasta shells until al dente
Drain and rinse to cool
Dry on paper towels
While pasta is cooking, mix ricotta cheese with the egg, parsley, salt and pepper until smooth
In large baking dish, spread a small amount of sauce on bottom on pan
Stuff each shell with the ricotta cheese mixture and place in baking dish close together
Once dish is full, spread some more sauce on top of each of the shells
Sprinkle with grated Parmesan cheese and grated mozzarella
Cover dish with foil and back in 350 oven for 40 minutes until warmed through
Remove foil and continue baking until cheese melts (approx. 10 min more)
