1 whole chicken, 3-4 lbs.
1 medium onion, diced
1 medium carrot, diced
2 ribs celery, sliced
1 bay leaf
Salt & Pepper to taste

Dumplings:
1 1/2 c. all purpose flour
3 tsp. baking powder
1 tsp. salt
3/4 c. milk

Directions:
Directions:
Place clean chicken in Dutch oven or other large pot. Add onions, carrots, celery, bay leaf and salt and pepper. Fill pot with water, just covering the chicken. Place over high heat and as soon as the water boils, cover and reduce heat to simmer. Cook until chicken is very tender, falling off the bone, 1-2 hours. Debone chicken and return to pot.

Fifteen minutes before serving time, prepare the dumplings: Sift together the flour, baking powder & salt. Add the milk and stir just until the flour is dampened. The chicken stock should be at a brisk simmer when you drop dumpling mixture, one teaspoon at a time into the chicken stock. Cover and cook 10-12 minutes. Serve immediately.

There are many versions of this Southern favorite. Several recipes were submitted and this recipe seems to be the "classic". It is a combination of all the best recipes. Some versions use rolled dumpling dough but the drop dumplings are much easier. Enjoy whether your dumplings are rolled or dropped!
