2 cups pecans
2 egg whites
1 cup sugar
1 tsp vanilla extract
Directions:
Directions:
Chop pecans in a blender or food processor until they are finely chopped. Beat egg whites with mixer until stiff but not dry. Combine pecans, sugar and vanilla; add to egg whites. Drop by ball-sized portions onto a parchment-lined baking sheet. Bake at 350 degrees for 7 minutes on the bottom rack of the oven. Move to the top rack and continue baking for another 7 - 10 minutes.
