Zucchini Pie Recipe

6 c. Zucchini
1 ½ tsp cream of tarter
dash of salt
2 tblsp of flour
dash of nutmeg
1 tblsp of margarine
1 ½ tsp cinnamon
1 ¼ c sugar
1 - 9 inch unbaked pie crust




Directions:
Directions:
Peel Zucchini and cut in half, lengthwise. Scoop out the seeds and thinly slice as if slicing apples for a pie. Cook Zucchini in a small amount of water, for about 15 minutes or until tender. The color of the Zucchini will look almost clear in color. Mix cream of tarter, salt, flour, lemon juice, nutmeg, sugar and cinnamon with the Zucchini. Pour mixture in the pie crust and dot with the margarine. Mix together the topping ingredients and crumble over the pie for a crust.

Bake 375 for 45 minutes or until golden brown.

Topping:
1 stick of butter
1 ½ c brown sugar
1 c flour
