Ready in 20 minutes

Vinaigrette
3 tbsp. fresh grapefruit juice
2 tbsp. fresh orange juice
1 tbsp. rice wine vinegar
c extra virgin olive oil
Salt and pepper to taste

Salad
4 half chicken breasts
Salt and Pepper to taste
Drizzle of olive oil
cup orange segments
cup grapefruit segments
4 cups Baby spinach
1 tbsp. pine nuts, toasted

Directions:
Directions:

Combine all vinaigrette ingredients together in a bowl and refrigerate.

Season chicken breasts with salt, pepper and olive oil. Grill until cooked through, about 3-4 minutes per side. Set aside

In a mixing bowl, mix fruit segments and spinach with the pine nuts, season with salt and pepper and toss with vinaigrette. Serve chicken with spinach salad on top.
