1 cup sugar
4 Tbsp. margarine
2 eggs
2/3 cup flaked coconut
1/4 tsp. coconut extract
1 tsp. baking powder
1/4 tsp. salt
1 1/2 cups flour
1/2 cup milk

Directions:
Directions:
Preheat oven to 350. Cream sugar and margarine, then add eggs one at a time, blending between each addition. Add the remaining ingredients. Divide evenly among muffin cups. Bake for app. 20 minutes . Makes 12-18 muffins.
