Toss together; saute in 2 T. olive oil
1 lb. boneless, skinless chicken thighs, cut into 1 inch chunks
1 t. each ground cinnamon, ground coriander, ground cumin,paprika, ground tumeric, kosher salt, and black pepper.

Add; stir in
1/2 cup onion, sliced
1 T. fresh ginger, minced
1 T. garlic, minced
1 c. cherry tomatoes, halved
12 large green olives
1/2 c. chicken broth

Garnish with
Orange wedges
Fresh cilantro sprigs

Toss chicken with seasonings in a large resealable plastic bag. Heat oil in a large nonstick skillet over medium-high heat, add chicken and saute until browned on all sides, about 5 min.

Add onion, cook 2 min, then stir in ginger and garlic; saute 30 seconds, stirring constantly. Add tomatoes, olive and broth, and simmer about 5 minutes to blend flavors.

Serve with apricot couscous (recipe follows)
Bring to a boil; stir in
1 c. apple juice
1 c. chicken broth
1 T. olive oil
1/4 c. dried apricots, sliced
1 c. dry couscous

Add; Garnish with:
1 T. honey
2 t. fresh lemon juice
salt to taste
toasted sliced almonds


Garnish with oranges and cilantro
