3-4 lbs. new or red potatoes, peeled and sliced
1 whole onion, thinly sliced
1 lb. each cheddar and Monterey jack cheese, grated
Polish sausage or ham, chunked
White sauce (milk, flour, butter, salt and pepper)
Italian seasoned breadcrumbs
I stick butter, sliced into pats

In a large Dutch oven, or casserole dish, layer potatoes, onion, grated cheeses, and ham. Pour white sauce over entire dish, and sprinkle bread crumbs all over the top. Arrange pats of butter on top and bake in a 325º for 1 hour.

I have never tasted scallop potatoes quite this good before. The girl’s grandmamma never even had a recipe for them, so I tried my best to write it down as she was making it one day.
