1/2 cup brown sugar
1/4 cup sugar
3 Tbsp butter
1 egg
3 large ripe bananas (peeled & mashed)
2 Tbsp dark rum
1/2 tsp vanilla extract
2 cups flour
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 cup chopped nuts or chocolate chips (optional)

Preheat oven to 350º. Combine brown sugar, sugar & butter in bowl & beat until light & fluffy. Beat in eggs, bananas, rum & vanilla until smooth. Sift the remaining ingredients together & lightly beat into the banana mixture. Scrape batter into greased pan* & bake for 50-60 minutes. Allow to sit for 5 minutes in pan & then remove to a rack to cool completely.

*The recipe calls for the pan to be oiled & floured but I just use the cooking spray (the one with flour if I have it, but it's not necessary) & I've never had it stick.

I've served this bread as a dessert or as a breakfast item & it's always a hit. I usually use both choc. chips & nuts (about a cup of each). I've also recently began sprinkling the top with a cinnamon-sugar mixture before baking to give the top crust added flavor.

This recipe came from a Pennsylvania Dutch cookbook that my mom owns.
