1 pound hot pork sausage
2 pounds ground round beef
4 very large onions, chopped
4 to 6 cloves gaarlic, minced
1 c. chopped parsley
3/4 pound fresh mushrooms, thinly sliced
3 (15oz) cans tomato sauce
1 fifth dry red wine
2 t. salt
1 t. sage
1 t. rosemary
1/2 t. marjoram
1/2 t. thyme
ground pepper

In a large kettle brown sausage and ground round. Add onion, cook until limp. Add other ingredients and simmer for 4 hours, sitrring occasionally. Make a day ahead, refrigerate overnight, and skim off fat. Freezes well.
