2 eggs
1/2 c. Crisco
1 c. sugar or 1/2 c. honey
2 overripe bananas
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. vanilla
1 tsp. almond extract (if using almonds)
2 1/2 c. flour
2 c chopped pecans or almonds

Directions:
Directions:
Preheat oven to 350º.

Cream eggs, Crisco, sugar or honey, and bananas.
Add baking soda, baking powder, salt, vanilla, almond extract (if using almonds), and flour. Mix.
Add chopped pecans or almonds

Grease loaf pan or cupcake tins. Bake 1 hour for loaf pan or 30 minutes for cupcakes. Time will vary depending on size pans used. Stick toothpick into center and when it comes out dry, it is done.
