¼ Kg. de espinacas
1 lechuga grande criolla
1 mazo de arúgula
1 radicchio mediano (lechuga guinda con vetas bien blancas)
½ escarola pequeña
½ taza de aceite vegetal
350 grs. de champignones en tajadas
2 cebollitas chinas, picaditas
½ taza de vinagre de vino tinto
1 a 2 cucharaditas de azúcar
¾ cucharadita de hojitas de tomillo fresco
¾ cucharadita de sal
1/8 cucharadita de pimienta negra molida gruesa

Aprox. 30 min. antes de servir preparar:
En un tazón grande para ensalada, quebrar las hojas en trozos grandes, de un tamaño que puedan ir a la boca.

Aderezo: prepararlo cuando ya se va a servir.
En una sartén mediana calentar el aceite a fuego medio-alto y cocinar los champignones y cebollitas chinas hasta que estén tiernos, moviendo de vez en cuando. Agregarle el vinagre, azúcar, tomillo, sal y pimienta y calentar moviendo constantemente hasta que hierva. Debe hervir 1 min.

Vaciar el aderezo caliente sobre las hojas y con cuidado mezclarlo ligeramente para que se impregnen con el aderezo. Servir de inmediato.
