3 c. flour
5 tsp. baking powder
1 tsp. salt
2 tbsp. sugar
4 large eggs, separated
2 1/4 c. milk
1 1/2 tsp. vanilla
2/3 c. vegetable oil, melted margarine or butter

Directions:
Directions:
Mix dry ingredients in large mixing bowl. Combine yolks, milk, oil and vanilla in measuring cup or bowl. Pour into dry ingredients; mix. In a separate bowl, beat egg whites until soft peaks form. Add to batter and fold in gently. Heat waffle iron, add batter and make waffles! Cut recipe in half for a small waffle iron.
