6 medium zucchini
2 ripe tomatoes
1/4 c. olive oil
2 tbsp. balsamic vinegar
2 tbsp. fresh minced basil leaves
salt and pepper

Directions:
Directions:
Slice zucchini lengthwise into planks for grilling. Brush both sides of each plank with olive oil and sprinkle generously with salt and black pepper. Grill zucchini over medium heat until dark grill marks appear on one side (2-3 minutes). Flip and continue to grill another 2 minutes. Remove from grill and cool slightly.

Meanwhile, whisk 2 tbsp oil with vinegar, 1/2 tsp salt and 1/4 tsp pepper. Toss with tomatoes and basil in a large bowl.

Cut grilled zucchini into 1" pieces. Toss with the tomatoes. Season to taste.
