2 c. pancake, waffle or biscuit mix 2 tbsp. brown sugar 1 tbsp. cinnamon 1 12 oz. can evaporated milk 1 c. pumpkin 3 tbsp. vegetable oil 2 tsp. vanilla extract 2 eggs
Mix first 3 ingredients in medium bowl, then add the rest of the ingredients and beat until smooth. Cook in a frying pan over medium heat until edges are dry and some bubbles form. Turn and cook until other side is browned.
