Ingredients: For chicken and stock: 1 4 lb. stewing hen or 2 small fryers, cut up 1 cup chopped celery tops 2 large onions, peeled and diced 1 T. salt water For sauce: 1/2 c. chicken fat or butter 1/2 c. sifted all purpose flour 2 c. chicken stock 1 c. light cream or milk salt and pepper For biscuits: 1 1/4 c. sifted self-rising flour 2 T. butter or margarine 1 egg Milk

Directions:Chicken and Broth. Wash chicken pieces. Place in large pot with celery, onion & salt. Add water just to cover. Cover tightly and simmer slowly until chicken is tender. Remove chicken and cool. Remove skin and bones and pull meat into smaller pieces. SAVE BROTH. For sauce: Strain broth. Skim off fat. Put fat in a measuring cup and add enough butter to make 1/2 cup. Put fat in small pan over moderate heat. Stir in flour. Stir in 2 cups chicken stock and 1 c. cream or milk, gradually. Cook over the med. heat, stirring constantly, until smooth & thickened. Season to taste with salt and pepper. Place chicken in a large flat casserole dish or in 2 small ones. Pour sauce over chicken. PREHEAT oven to 400º BISCUITS: Sift flour. Cut in butter with pastry cutter or 2 knives until fine as cornmeal. Break egg into measuring cup and add enough milk to make 1/2 cup. Beat lightly. Add egg and milk to dry ingredients and mix lightly. Roll out on floured board to about 1/2 inch thickness. Cut with 2 inch biscuit cutter. Arrange biscuits on top of chicken. Bake until biscuits are brown and sauce is bubbling. |
