2 1/2 lbs. boiling potatoes
1/4 lb. plus 1/2 stick butter
1 pint light cream
plain bread crumbs
grated Parmesan cheese

Directions:
Directions:
1. Peel and boil potatoes. Chill in refrigerator overnight.
2. Next day, chop potatoes, place in thick bottom pan, salt and pepper to taste.
3. Add the cream and 1/4 lb. butter. Mix and cook over low heat, stirring every 5 minutes until potatoes have thickened.
4. Remove to casserole or shallow pan. Sprinkle liberally with bread crumbs and grated Parmesan to taste. Melt 1/2 stick butter and sprinkle over potatoes.
5. Bake at 375º until browned.

Note: The secret is the overnight in the refrigerator!
