2 medium Acorn or Butternut squash
1 10 ounce package frozen spinach (thawed)
1/3 cup grated Parmesan cheese
3 slices bacon, cooked and crumbled
3 Tbsp butter
1 green onion thinnly sliced
1/8 tsp cayenne pepper
2 Tbsp soft breadcrumbs
1 Tbsp grated Parmesan cheese
salt and pepper to taste

Halve and seed the squash. Bake, cut side down at 350 for 30 min. Turn cut side up, cover and bake for 20 more min. Let cool slightly, and scoop squash into a large bowl, leaving 1/4" thick shell. Mix squash, spinach, Parmesan, bacon, butter, and onion. Fill the shells with this mixture. Combine breadcrumbs with 1 Tbsp Parmesan. Sprinkle over squash and bake, uncovered, 25 to 30 minutes…350 degrees.
