1 1/2 cups Cauliflower florets 3 medium carrots, sliced 1/2" thick 1 3/4 cups broccoli, cut into 1" pieces 1/2 cup mayonnaise 2 Tbsp finely chopped onion 4 Tbsp prepared horseradish 1/4 cup breadcrumbs 1 Tbsp melted butter
Cook vegetables until crisp-tender. Combine mayo, onion, horseradish, salt and pepper. In a 1 1/2 quart casserole, combine veggies and sauce. Combine bread crumbs with melted butter and sprinkle over top. Sprinkle with paprika, and bake, uncovered, at 350, for15 minutes.
