1 C of mashed cooked potatoes
2/3 C sugar or Splenda
2 eggs, beaten
1 C of evaporated milk
1/2 tsp. lemon extract
1/2 tsp. cinnamon
1/2 tsp salt
1/2 tsp. nutmeg
1 unbaked pie shell

Directions:
Directions:
Mix together all ingredients, except milk. Pour ingredients into medium saucepan with scalded milk. Baste edges of pie shell with butter. Cover edges with foil. Pour batter into unbaked pie shell. Bake at 425 degrees for 20 minutes. Reduce heat to 350 degrees for another 2 minutes or so. Remove foil from edges. Cool before serving. Best when served warm with vanilla ice cream or thawed Cool Whip.
