1 pound ground beef
1 cup Italian breadcrumbs
2 eggs, lightly beaten
1/2 cup water
3/4 cup grated Parmesan cheese
7 cups chicken broth
1 cup finely chopped onions
1 cup finely chopped carrots
1 pkg frozen chopped spinach

Directions:
Directions:
In a large bowl combine beef, breadcrumbs, Parmesan cheese, eggs and water. Mix well and form into 1" balls. Set aside. In a large pot, combine chicken broth, onions and carrots. Bring to a boil. Reduce heat and simmer, covered, for 10 minutes. Stir in spinach and oregano. Return to boil. Add meatballs, reduce heat, and simmer, covered, about 10 minutes. Serve with additional Parmesan cheese, if desired. Makes about 2 1/2 quarts.
