1 pound tomatoes, sliced
1/4 lb. Mozzarella cheese, thin sliced
1/3 cup extra virgin olive oil
3 Tbsp red wine vinegar
3 Tbsp chopped fresh parsley
3 Tbsp finely chopped onion
2 Tbsp fresh basil, chopped (or 1 tsp dried)
Freshly ground pepper to taste
1/4 tsp salt

Directions:
Directions:
Arrange tomato and cheese slices on a platter. In a small bowl, whisk together the oil, vinegar, parsley, onion, basil, salt and pepper. Pour over
the tomatoes and cheese. Cover and refrigerate several hours, occasionally spooning herb mixture over tomatoes and cheese.
