1 tsp salt 2 Tbsp sugar 1 tsp cold water 2 Tbsp white vinegar 1 medium cucumber, peeled and thinly sliced 1 cup thin strips sweet onion (Vidalia or Bermuda)
In a shallow bowl, with a fork, beat together the salt, sugar, vinegar and water. Add the cucumber and onion, cover and chill for 30 to 60 minutes. Serve with a slotted spoon. This dish may be prepared ahead of time, but the cucumbers and onions will lose some crispness, the longer they sit.
