1 1/2 c sweet potatos (peeled and cubed
1/2 c yellow onion, chopped
1/2 c red bell pepper, diced
2 garlic cloves, minced
1 jalapeno pepper, seeded and minced
2 8oz boneless chicken breasts
1 t ground cumin
1/4 t crushed red pepper flakes
4 c chicken stock or canned broth
2 c cooked rice
1 15oz black beans, drained

Directions:
Directions:
1. Bake or fry chicken until almost done.
2. Cook rice, set aside
3. Saute first 5 ingredients 5 min. or until potatos are tender, with a little olive oil.
4. Stir in chicken and cook several more minutes.Add next 6 ingredients. Bring to a boil and simmer 10 min.
5. Add peanut butter and stir well.
