1 Stick of Butter
1 8 ounce package of fresh mushrooms
1/2 chopped onion
1/4 c. all purpose flour
1/2 teaspoon salt
1/4 teaspoon ground pepper
1 14.5 ounce can chicken broth
1 cup heavy whipping cream
2 cups chopped cooked chicken
1 2 ounce jar diced pimentos,drained
Hot cooked rice

Directions:
Directions:
Melt butter in skillet add onions and mushrooms; simmer 5 minutes. Stir in flour, salt and pepper and cook stirring constantly 2 minutes. Gradually stir in chicken broth and cream;continue to stir and cook 5 minutes until thickened. Add chicken and pimentos, cook additional 5 minutes until thickened and bubbly. Can be served over hot rice or I add all cooked rice (2 cups) and serve like chicken and rice.
