6-8 potatoes, peeled, cubed
1 lrg onion (or 3 small ones), chopped up
1 lrg carton chicken broth 32oz
OR 4 tsp. chicken bouillon and 4c.s of water
1 stick (1/2 c.) real butter, or margarine
1 T. salt free seasoning OR salt and pepper
(My husband grew up with bacon in it, haven't tried that yet)

Saute onions in the butter.
Add potatoes, broth and seasoning.
Bring to boil, reduce heat to simmer for about 30 mins, until potatoes are very soft. Mash/puree (I just stick a hand mixer in) until right smoothness. Opt: Add milk as preferred. Cubed cheese, chives. A fiend of mine threw in a whole block of cream cheese to hers and said it was yummy!
