Ingredients: |
Ingredients: 10 oz. fresh mushrooms one bunch green onions (scallions) 1/3 cup Hellman's Mayo 2 cups shredded cheese (mild cheddar or mexican blend work best) One loaf party rye bread (pumpernickle is yummy)
|

Directions: |
Directions:Clean and coursely chop mushrooms and boil until tender. Drain and slightly cool the mushrooms. Finely chop the scallions. In a medium bowl combine the scallions, cheese , mushrooms and mayo. Spread 1 healthy Tbsp of mushroom cheese mixture onto each slice of party rye. Place on a cookie sheet and pop under the broiler until hot and just turning brown and bubbly, about five minutes. Each recipe yields about 18-20 appetizers, a little over half of the loaf of bread. |

Notes: We all looked forward to an occasion that would prompt Mom to make this bread (although she never needed much prompting). The appreciation that we always showed (especially the men in the family) made this one of her favorite appetizers to make. Count on 2-3 pieces (at least) per person
