6 boneless, skinless chicken breast halves
1/2 teaspoon salt
2 tablespoons olive oil
3 cloves of garlic, minced
1 1/2 cup of whipping cream
1/3 cup Parmesan cheese
1/2 teaspoon black pepper
1 tablespoon chopped fresh parsley
1 tablespoon minced onion

Preheat oven to 375º. Sprinkle chicken with salt; and coat with flour. Heat olive oil in a frying pan - until hot. Add chicken, cook until golden. Remove chicken and place in a 13x9 baking dish. In the same frying pan heat garlic and onion, once tender add whipping cream, Parmesan and pepper. Cook until sauce is bubbly and slightly thickened, 2-3 minutes. Spoon sauce over chicken in baking dish.

Bake chicken for about 8-12 minutes. Sprinkle with parsley.

If you do not want to use olive oil, you can use butter but it is important to use whipping cream instead of milk because the fat helps keep the sauce from separating and gives it a nice flavor.

Double recipe for larger groups.

We serve this with cooked spaghetti and serve with spaghetti and then chicken and sauce on top with a nice side salad.
