½ Kg. de arroz de grano largo de buena calidad
½ cebolla entera
2 ramas grandes de perejil
10 tazas de agua

½ taza de mantequilla a temperatura ambiente
½ taza de queso parmesano rallado
mayonesa bien sazonada

Poner en una olla el agua con sal, la media cebolla entera, las ramas de perejil y cuando hierva echar en ella en forma de lluvia el arroz (apenas lavado), se remueve con cuchara de madera y se deja cocinar por 18 min. exactos (ya estará listo). Se cuela, se le retira la cebolla y las ramitas de perejil. Se pasa a un recipiente amplio y allí se le agrega la ½ taza de mantequilla y la ½ taza de queso rallado. (Verificar la sal).
Enmantequillar ligeramente moldecitos individuales y rellenarlos con el arroz para que se moldeen; dejarlos un rato y volcarlos a los platos de entrada. Untar cada uno, superficie y costados, ligeramente con mayonesa.
Rodear cada moldecito con lechuga americana “a la paja” (cortada finita) y tomate cortado en cuñas.
