Short ribs of beef, square cut - 3lbs.
flour - 2 T.
Salt - 1 t.
Pepper - 1/8 t.
Onions, sliced - 2 medium
Dry Red wine - 1 c.
Chili Sauce or Ketchup 1/2 c.
Brown Sugar - 3 T.
Vinegar - 3T.
Worcestershire - 1T.
Dry Mustard 1/2 t.
Chili Powder - 1/2 t.
Water - 1/2 c.

Directions:
Roll the short ribs in the flour combine with salt and pepper to coat all sides.
Melt shortening in a large heavy pan. Add short ribs and cook slowly until well browned all over. Add onions and brown sugar lightly.
Add the wine, chili sauce, brown sugar, vinegar , Worcestershire, mustard and chili powder. Cover and cook over low heat until meat is tender (about 2 hours)
Remove from heat , cool, and refrigerate until needed.
Lift off all the solidified fat. Stir in the 1 1/2 T. of flour blended with 1/2 c. water. Cook until thickened and meat is heated through.
