1/2 c. shopped fresh cilantro
1/3 c. vegetable oil
2 tsp. finely grated lime peel
1/4 c. lime juice
2 tbsp. minced fresh gingerroot
1 tbsp. minced garlic
1 tsp. ground cumin
1/4 tsp. kosher salt
1/8 tsp. crushed red pepper flakes
1 - 1 1/2 lb. tuna or swordfish steaks

Directions:
In small bowl, combine first 9 ingredients. Rinse tuna; pat dry with paper towels. Pour marinade over fish, turning to coat. Refrigerate, covered, 30 min. To Grill: Prepare grill. Spray grill rack with no stick cooking spray. Using direct heat cooking method, arrange fish on grill rack 4-5 in. over medium hot coals. Grill, uncovered, until slightly opaque in center (about 10 min. per inch of thickness measured at its thickest part), turning once. Garnish with cilantro sprigs.
