8-10 medium sized red potatoes, 2 scallions, 3 tbs Duke mayonaise, salt, pepper and garlic to taste.

Directions:
Directions:
Wash and cut potatoes into cubes. Boil potatoes until soft (About 10-15 minutes). Cut scallions into small pieces and put into bowl. Add salt pepper and garlic in bowl of scallions and let sit. Scallions will soak up salt, pepper and garlic. Once potatoes are done, drain and place in bowl of scallions. Add mayonaise and mix. Serve potatoe salad warm. YUM!
