1 tart shell
8 to 10 oz. mozzarella cheese, shredded
2 Tbsp. chopped fresh basil, plus extra for garnish
4 to 6 plum tomatoes, sliced to 1/4-inch
1/2 tsp. salt
1/4 tsp. pepper
1/4 cup olive oil
Basil, chopped for garnish

Directions:
Directions:
Preheat oven to 400-degrees. Line tart pan with the tart shell. Spread bottom of pastry shell with shredded cheese and basil. Cover with tomato slices. Sprinkle tomatoes with salt and pepper and drizzle with olive oil. Bake about 30 minutes. Watch carefully. When crust is golden and cheese is bubbly remove. Garnish with fresh basil. Serves 8.
