2 c. chick peas
1 tsp. bicarbonate of soda
2 tsp. crushed garlic
3/4 c. lemon juice
1/2 c. tahini
cumin
parsley stems and leaves
olive oil

Directions:
Directions:
Soak chick peas overnight in water. The next day, drain the water and sprinkle the peas with bicarbonate of soda. Let them sit for about 1/2 hour then wash well. Add fresh water and boil the peas until soft. Drain the peas. Then, using a grinder or food processor, grind them into a smooth paste. Add garlic, lemon juice and tahini. Mix well. Place in a flat dish and decorate with cumin, parsley and olive oil. Serve with pita bread.
